DescriptionHere's a gorgeous recipe from my vegan pal Esther. I've just had a big
bowl for dinner, and it is scrumptious. ~ Miss Giggles

3 cucumbers (peeled and juiced)
1 cucumber diced
1 large avocado
1 clove of garlic
3 tablespoons mint (chopped)
Juice of 1 lemon
Garnish - cubes/strips of red and yellow capsicum (bell pepper)
Methods/steps
1. Peel and juice 3 of the cucumbers
2. Pour juice into the blender and add remaining ingredients
3. Blend
Additional Tips
Variation: If you want a thicker soup, or a decadent pasta sauce, add an
extra avocado
Note: It looks glorious served in a crisp white bowl, topped with
slithers (or small cubes) of red and yellow capsicum
